Stir fry

2 tbsp vegetable oil
1 bell pepper, cut lengthwise in half, thinly sliced
225g oyster mushrooms, sliced
2 leeks, trimmed, washed, and cut diagonally into 1/2-inch pieces
6 scallions, thinly sliced
450g ham steak, cut into thin strips
2 tbsp soy sauce
2 tbsp white-wine vinegar
2 tbsp cornstarch (dissolved in 2 tbsp water)
4 sheets of Mountain Bread™, cut lengthwise into thin strips

1  Heat a wok until hot. Add oil and swirl to coat the wok.  Add bell pepper and stir-fry 1 or 2 minutes.  Add oyster mushrooms and leeks and stir-fry 1 or 2 minutes or until vegetables begin to soften.

2  Push vegetables to one side and add the scallions, ham and Mountain Bread™ strips.  Stir-fry 2-3 minutes, tossing ingredients to mix. Stir in soy sauce and vinegar, then cornstarch mixture.

3  Bring to boil and stir-fry 1-2 minutes or until sauce thickens and coats the ingredients.
