Mushroom and Macadamia Triangles

8 sheets of Mountain Bread
200 gm mushrooms sliced
1 tsp butter or olive oil
2 spring onions
100 gm macadamia nuts, roughly chopped
3 tbsp evaporated milk or cream
50 ml milk
salt and pepper

1 Pre-heat oven to 180c

2 Dry roast (no oil) chopped macadamia nuts for 10 minutes. Ensure you shake the tray every 3-4 minutes so that the nuts brown evenly.

3 Melt butter or oil in a fry pan, add sliced mushrooms and cook til tender. Add roasted macadamia nuts, spring onions and cream or evaporated milk. Simmer until mixture thickens and season with salt and pepper.

4 Cut Mountain Bread into half length ways. Put filling into the corner and fold into a triangle. Repeat process until filling and Mountain Bread are all used. Brush triangles with milk and bake for 10 minutes.
