Savory Corn Cakes

1 egg
1 cup creamed corn
1 large potato, grated
1 small zucchini, grated
1 rasher bacon, diced small
3 sheets of  Mountain Bread, cut into 1cm x 1cm pieces.
salt and pepper
3 tbsp vegetable oil

1 Add all the ingredients except the oil together and stir until combined

2 Heat oil in a pan and reduce heat to medium. Place dessert spoon full of mixture into the pan. Cook for 2-3 minutes, turn and cook for a further 2-3 minutes. Remove and drain on kitchen paper before serving. Nice as snack, or a side dish.

*The bacon can be removed for a vegetarian dish.
