Semi-dried tomato and olive quiche


Semi-dried tomato and olive quiche

2 sheets Mountain Bread™
90gm semi-dried tomatoes, sliced
20gm black olives, sliced
60gm mozzarella cheese, sliced
1 cup light and creamy evaporated milk
2 eggs
salt and pepper

1  Lay Mountain Bread™ into 20cm backing tray slightly overlapping.

2  Combine evaporated milk, eggs and salt and pepper to taste and whisk well.  Arrange tomatoes, olives and cheese over the Mountain Bread™  and pour over the egg mix.

3 Bake in 200c oven 25-30 minutes until light golden and set.
