Chicken Pasties


Chicken pasties

1 tbsp fresh thyme, chopped
340gm chicken breasts, ground
1 tbsp vegetable oil
2 slices bacon, chopped
1 large potato
1carrot, diced
1 cup mushrooms
½ onion, chopped
1/2 tbsp plain flour
2/3 cup chicken stock
1 pkt of Mountain Bread™
parsley and lettuce leaves to garnish

1  Preheat oven to 190c.  In a skillet, heat oil, then add bacon, onion, potato and carrot. Fry 2 - 3 minutes until onion starts to soften then add chicken and mushrooms and cook 3 - 4 minutes. Stir in flour and cook for 1 minute then gradually stir in stock and cook until thickened. Season with salt and pepper and cool.

2  Place 2 tablespoons of the chicken mixture in center of each bread slice and fold over filling. Slightly wet the edges with water to stick, spray with a little oil and cook in the oven until golden.
