Chicken (Tuna) Fortune Parcels
1 tbsp peanut oil 2 clove garlic, crushed 1 tbsp fresh ginger, grated 150gm chicken mince 3 tbsp fresh coriander leaves, finely chopped 2 tsp lime juice 2 tsp fish sauce 2 tsp soy sauce 2 tsp soft brown sugar 1 pkt of Mountain Bread™, each sheet cut into 9 pieces
1 Heat the oil in a frying pan over medium heat then add the garlic and ginger cook for 1 minute. Add the mince and cook for 4 minutes, or until cooked. Stir in the coriander leaves, lime juice, fish sauce, soy sauce and sugar, stirring for 1 minute, then cool.
2 Form your thumb and index finger into a circle, and place a square of Mountain Bread™ on top. Place 1 teaspoon of the mixture in the center, then lightly brush the edges with water. Push the mixture down firmly with your free hand, tightening the circle of your thumb and index finger at the same time. Encasing the mixture in the wrapper and forming a bag.
3 Deep-fry the parcels in hot oil until well browned then drain on absorbent paper.
