Cheese and spinach triangles


Cheese and spinach triangles

2 tbsp olive oil
1 small onion, finely chopped
450gm frozen spinach, thawed
115gm feta cheese, crumbled
55gm chopped walnuts
¼ teaspoon nutmeg
salt and pepper
1 pkt of Mountain Bread™, cut into 5cm strips

1  Preheat oven to 200°c. Heat the olive oil in a frying pan, add the onion and cook until softened.   Squeeze all the liquid out of the spinach a handful at a time, then add to the onion.  Increase the heat and cook, stirring until all excess moisture has evaporated.

2  Transfer the spinach mixture to a bowl and let it cool. Stir in the cheese and walnuts and season with nutmeg, salt and pepper.

 Lay the Mountain Bread™ on a flat surface and bush with some butter. Place a tablespoon of the spinach mixture at the end of one strip of bread. Fold a bottom corner of the pastry over the filling to form a triangle, then continue folding over and shape the triangle until all the ingredients are used.

 Set the triangle on baking tray and bake until crispy and golden brown.
